Recipe: Tomato Basil Kale

Ingredients

  • 1 bunch of Fresh Kale
  • Handful of Fresh Basil*
  • Dried Basil to taste
  • 2 Plum Tomatoes
  • Juice of ½ lemon
  • 3 Cloves Fresh Garlic
  • Olive Oil
  • Salt & Pepper to taste
  • Brown Rice or Whole Grain Pasta*

Directions

  1. Rinse Kale, Tomatoes, and Fresh Basil
  2. Chop Kale and Tomatoes into bite-size pieces
  3. Mince Garlic
  4. Heat Olive Oil in pan
  5. Add Garlic, Dried Basil, Salt, Pepper and Lemon Juice
  6. When garlic is soft, add chopped Kale and Tomatoes
  7. Cook to desired tenderness
  8. Add Fresh Basil to taste and as garnish
  9. Serve over Brown Rice or Whole Grain Pasta
