RECIPE | Thai-Inspired Coconut Curry Stew

Ingredients

  • 2 bunches Green Veggies of your choice
  • 3 large carrots
  • 2 large Sweet Potatoes
  • 1 Red Bell Pepper
  • 2 medium Onions
  • 1 lb. Boneless Chicken or Fish (optional)
  • Green or Red Curry to taste
  • Dried or Fresh Basil to taste
  • Bragg Amino or Soy Sauce to taste
  • Red Pepper Flakes to taste
  • 2 tablespoons Oat bran (or thickener of your choice)
  • 64 oz. Coconut Milk
  • Top off pot with Water

 

Directions

  1. Clean & Chop veggies, onions, chicken/fish
  2. Place chicken/fish, sweet potatoes, onions and seasonings in a large pot
  3. Bring to a boil
  4. Lower flame, cook over medium heat for 30 mins.
  5. Add green veggies, oat bran/thickener
  6. Lower flame, cook over low heat for a minimum of 30 mins; to desired tenderness
  7. Serve over brown rice (4 cups, cooked separately)
